The basic salmon

This is, in comparison, pricey, but worth it.

Get salmon fillets, 1/3 to 1/2 pound per person. Try for the same thickness throughout, not the really small tapered tail bit. Put tinfoil in a pan, or a toaster pan if you're just making one and put the salmon on skin-side down

Mix a large spoonful of sour cream with a large spoonful of mayonnaise. Add some herbs and a touch of lemon juice, or whatever you like. Spread the sauce on top of the salmon.

Cook. Bake for a few minutes at 350 or so, then broil to brown the top for another 5 minutes or until brown. Maybe 10 minutes total for <1 inch thick, 10-15 minutes for >1 inch. Let stand to cool and carry-over cook for a few minutes and serve, it should come right off the skin.

$6 to feed two, if you find it on sale. Takes about 20 minutes. Serve with steamed greens and rice.
